4 bone-in, skin-on chicken thighs
2 teaspoons salt, for the chicken
1 teaspoon pepper, for the chicken
1 tablespoon oil
3 cloves garlic, chopped
½ onion, diced
1 tomato, diced
2 cups spinach(80 g)
2 cups heavy cream(480 mL)
1 teaspoon salt
1 teaspoon pepper
½ cup grated parmesan cheese(55 g)
2 tablespoons fresh flat-leaf parsley, chopped
Instructions
Season the chicken thighs generously with salt and pepper on all sides.
In a large skillet, heat the oil over medium-low heat. Once hot, place the chicken thighs in the pan, skin side down. Let them cook for about 13 minutes, moving them around occasionally so the skin crisps evenly. You’ll know it’s ready when the skin feels firm and crispy.
Flip the chicken and cook for another 15 minutes until fully cooked. Once done, remove the chicken from the pan and set it aside.
In the same pan, add the minced garlic and chopped onion. Sauté until the onions turn soft and translucent. Toss in the sun-dried tomatoes and spinach, stirring until the spinach wilts down.
